NO.162023饲料研究FEEDRESEARCH71试验研究地黄渣色素抗氧化性与稳定性研究赵桐悉闵琰罗婧欣成世哲邱彬航王亚齐乔汉桢*王金荣*(河南工业大学生物工程学院,河南郑州450001)摘要:试验旨在研究地黄渣色素抗氧化性及色素稳定性。试验采用超声辅助浸提法提取地黄渣色素,检测地黄渣色素对2,2'-联氮-双-3-乙基苯并噻唑啉-6-磺酸(ABTS)自由基、1,1-二苯基-2-三硝基苯肼(DPPH)自由基和羟基自由基的清除率,考察温度、光照、金属离子和pH值对地黄渣色素稳定性的影响。结果显示,地黄渣色素具有较强的抗氧化活性,且对DPPH自由基、ABTS自由基、羟基自由基均具有一定的清除能力。稳定性试验结果表明,地黄渣色素具有较好的热稳定性和宽泛的pH值稳定性,耐受紫外光照,强酸和金属离子会降低色素稳定性。研究表明,地黄渣色素的抗氧化性和稳定性较好,具有开发成为饲用色素的潜力。关键词:地黄渣;色素;抗氧化;稳定性中图分类号:S816.7文献标识码:A文章编号:1002-2813(2023)16-0071-06Doi:10.13557/j.cnki.issn1002-2813.2023.16.014StudyonantioxidantactivityandstabilityofRehmanniaglutinosaresiduespigmentZHAOTong-xiMINYanLUOJing-xinCHENGShi-zheQIUBin-hangWANGYa-qiQIAOHan-zhenWANGJin-rongAbstract:TheexperimentwastostudyRehmanniaglutinosaresidueantioxidantandpigmentstability.ThepigmentofRehmanniaglutinosaresiduewasextractedbyultrasonic-assistedextractionmethod,andthescavengingratesofABTSfreeradicals,DPPHfreeradicalsandhydroxylradicalsofRehmanniaglutinosaresidueweredetected.Theeffectoftemperature,light,metalionsandpHvalueonpigmentstabilityofRehmanniaglutinosaresiduewereinvestigated.TheresultsshowedthatthepigmentofRehmanniaglutinosaresiduehadstrongantioxidantactivity,andhadcertainscavengingabilityonDPPHfreeradicals,ABTSfreeradicalsandhydroxylfreeradicals.ThestabilitytestresultsshowedthatthepigmentofRehmanniaglutinosahadgoodthermalstabilityandwidepHvaluestability.Itcouldwithstandultravioletlightandstrongacidandmetalionswouldreducethestabilityofpigment.ThestudyindicatesthatthepigmentofRehmanniaglutinosahasgoodantioxidantandstability,whichhasthepotentialtobedevelopedintofeedingpigment.Keywords:Rehmanniaglutinosaresidues;pigment;antioxidant;stabilit...
